West Coast Cuisine
Cuisine around the Western Coast of the USA is as vibrant and eclectic as the regions themselves. In the mountain states of Utah and Nevada, for example, expect plenty of grills and BBQ flavours, with beef and wild game taking the centre stage. Though when you’re in Las Vegas, take advantage of the fact that you can eat anything - from state-of-the-art molecular gastronomy to meat and cheese-filled burgers. As you get closer to the coast, you’ll note that seafood, fusion and pan-Asian cuisine has become more prevalent. On the other hand, California is heavily influenced by Asian, Mexican and Mediterranean cuisine with a heavy use of avocado and generally healthier ingredients - preferring meats such as turkey and chicken over the beef and pork that are popular in Nevada. Wine is, of course, of growing importance in California too, thanks to the Napa Valley wine region, which has been building a worldwide audience for the last half a century.
